Feature Interview: Soulla; Founder of Star Anise Organic Wholefoods
Hi Soulla, Tell us about your brand
Star Anise Organic Wholefoods is the fusion of old and new: traditional nutrient-dense wholefoods and the modern table, creating vibrant health and longevity.
Our artisan products are all made on-site at our newly opened Broth Bar & Larder and are free from refined sugar, industrial seed oils, tap water, agave syrup and gluten. I believe that these ingredients have contributed to the epidemic of modern illness and disease.
In addition, I am a traditional foods cooking instructor and run regular cooking classes in the eastern suburbs. I am also a a health coach, a holistic lifestyle blogger, and an author of a School LunchBox Inspiration ebook.
How did it begin?
From a young age, I have always had a deep interest and passion for health and wellbeing, ever curious as to the effects that food and other lifestyle factors had on the way we felt and function. Forever reading and experimenting, my deep yearning was to be the best version of myself that I possibly could be and to simply share my learnings with others.
Of course back then I simply followed the conventional food pyramid, thinking that that was best. I even thought I would take it one step further by being vegetarian for almost a decade. Even on the cleanest unprocessed vegetarian diet, my body was so demineralised and lacking in nutrients.
One door led to another and I discovered the works of Dr Weston A Price and the power of nutrient-dense traditional wholefoods. I was so blown away with the improvements to my and my family’s health on every level- physical, emotional and mental. We went from barely surviving to thriving. I stopped breaking bones and needing constant osteopathic treatment, I started menstruating again, my energy levels, strength and stamina soared, my baby’s chronic infections and rounds of antibiotics ended, and my ex-husbands’ depression, constant lethargy and tiredness ‘vanished’. All this simply from changing our diet!
10 years ago in Sydney these products were not available – and as desperation breads creativity, I began creating these products: first for my family, then friends, and now the community.
What makes you passionate about broth?

What’s your favourite product in your range and why?
I am a self-confessed raw dark chocolate lover… and our fruit & activated nut, orange & chilli or lemon & ginger raw dark sokolata is my guilt-free indulgence. Our activated macadamias are so light and crispy they are definitely one of a kind in Australia, highly addictive and very much the bomb!
on a personal note tell us your favourite hobby and what your typical weekend looks like?
I love being in nature especially the ocean. My kids and I live near Bronte beach so I try to take every opportunity to duck down for a quick swim and play in the sand. On weekends, I love to take a long bushwalk with friends and my children. I call it ‘nature-bathing’ where we immerse ourselves in nature for a whole day, eat outdoors, walk in the sun, swim in watering holes and turn off our phones.
And finally what’s your favourite class at Bondi outdoor.
I love high intensity interval training. Replicating the movements of our hunter gather ancestors resonates with me so anything that involves functional movement and stretching is so pleasurable.
